Stuffed Savory Peppers

Ingredients

Quinoa

  • 1 Cup Quinoa
  • 2 Cup Water

Veggie Mix

  • 1 Cup Frozen edamame beans
  • 1 Cup Fresh asparagus
  • 5 Cloves Garlic
  • 1/2 Cup Vegan Feta Coconut Cheese
  • 4 Whole Sundried tomatoes
  • 1 Cup Cube Tempeh/tofu/beans
  • 1 Tbsp Thyme
  • 1 Tbsp Sage
  • Salt & Pepper
  • Garnish with cilantro
  • 4 whole Green onion
  • 3 Whole Yellow peppers
  • 1 squirt Black Garlic Vinegar to taste
  • 1 Bunch Cilantro

Instructions

Cook the quinoa and water in a small sauce pot, boil for 5 min and simmer for 15 min until water as evaporated

    Cook all the cut up ingredient together in a saucepan for about 7 minutes

      Put the mixture into the peppers and put in the oven at 450 broil until brown, about 20-40 minutes

        Garnish with the cilantro and add the vinegar!
