Indian Curry Lentil Soup

Ingredients

  • 1 Box of Kind Oyster Mushrooms
  • 1 Cup Veggies ( Corn, Beans, Carrot mix)
  • 1/4 Cup of Dehydrated Vegetables ( Carrots, Onions, Potatoes, Red Peppers< Green, Peppers, Leeks)
  • 3 whole Sun-dried Tomatoes
  • 1 whole Sweet Potato
  • 1 whole Carrot
  • 1 whole JalapeƱo Pepper
  • 1 Cup Lentils
  • 1 Cup Quinoa
  • 1 whole Bay Leaf
  • 1 Cup Mushroom Broth
  • 1 Can Coconut Milk
  • 1 Cup Water

Spices

  • 1 Tsp Allspice
  • 1/2 Tsp Lemongrass Spice
  • 1/4 Tsp Chinese Spices

Instructions

  • Cut the Sweet Potatoes, Carrot, Sun-Dried Tomatoes, Mushrooms and Jalapeno Peppers into bite-size pieces.
  • Oil a pan and fully-cook the mushrooms for about 20 minutes.
  • In a large crockpot, add all the other ingredients and the spice mix.
  • Cook for 3 hours on low mode and serve!
